Eskimo Mátrai Twin-Peppered Aged XXL Salami is a premium handcrafted salami specialty made from meat of a protected buffalo breed (Mátrai water buffalo) and free-range native donkey. It is a durable, long-lasting product whose unique flavor comes from slow smoking over carefully selected beechwood, as well as a lengthy and specialized aging process. The meat is exceptionally rich in Omega-3 fatty acids and vitamins, and is also an outstanding source of iron. The animals used as raw material are raised exclusively on natural vegetation, therefore the processed product is guaranteed to be free from hormones and antibiotics. This harmonious delicacy, seasoned with Parajd salt and Hungarian pepper, is a true butcher?s masterpiece, with a clearly distinguishable pattern of lean meat and fat visible in each slice.It contains no nitrites, additives, flavor enhancers, or even traces of paprika, making it an excellent choice for people suffering from allergies or food sensitivities.

Shelf life: In the original vacuum foil frozen for 6 months, stored in a dry, cool place for 2-3 weeks. Its shelf life during storage can be significantly affected by desiccation.
Salami production used to be a way of storing meat. In some places, meat was stored in the cleaned skin of the animals and stuffed into the stomachs of the intestines. Over the centuries this has been transformed into "salami". Initially it did not contain any spices according to the traditions of historical Hungary. The use of peppers, onions, and other spices spread only at the very end of the 18th century!

Depending on how fatty or dry the meat of the animal being processed is, which part of it can be prepared to the right consistency, etc. Our products are not made on an assembly line or using an industrial method, so we cannot guarantee exactly the same quality.
