It is a rectangular specialty made of leathery bacon loin, preserved by pure salting and light smoking, one part of which has a fleshy, reddish, pink tone and the other part resembles white bacon. The fatty part highlights the true flavor of the meat, due to its pleasant soft taste it is consumed with excellent breakfasts.
It can be eaten sliced, raw or cooked. The "Ham and Eggs" made with it are extremely delicious.
